Chocolate Molten Lava Cake


I was watching Food Network this weekend when I saw a recipe for chocolate molten lava cake. It inspired me to try to make this sweet and gooey chocolate dessert. I must admit, the results were absolutely delicious!!! My boyfriend and I ate them all, and I ended up making a second batch! It's worth a try!

When you break into it, chocolate lava starts flowing out. Absolutely delicious!

Ingredients
1/2 pound (2 sticks) unsalted butter, plus more for greasing
1/2 pound bittersweet chocolate, at least 60 percent
1/2 cup granulated sugar
3 large eggs
3 tablespoons cake flour

    Directions
    Preheat the oven to 350 degrees F. Butter 4 (6-ounce) ramekins and set aside.
    Over a double boiler, melt the butter and chocolate, whisking until smooth. Make sure to whisk until the chocolate and butter have combined into a smooth chocolate mixture. Whisk in the sugar, making sure most of the sugar dissolves in the warm chocolate mixture.
    In a medium bowl, whisk the eggs until smooth. Pour the chocolate mixture in to the eggs. Whisk until smooth, then add the flour and combine until smooth. Pour the batter into the prepared ramekins about 2/3 full. Bake the cakes until slightly puffy and set around the edges, 20 to 25 minutes. Don't worry if your cake tester comes out wet, the center should still be loose. Serve warm.

    I just saw these all over Pinterest.com Had to come see and get the recipe. I've tried a few other recipes, but this looks like the best lava flow! ;)

    I made this tonight. I followed the recipe exactly but only had large muffin tins to cook them in. Really good but next time i will use regular semi sweet choc chips instead of bitter.Just a little too bitter for my husband and i even with powdered sugar and vanilla ice cream. That's the only thing i would do different. very good recipe.

    I made these for Valentine's Day and they were a total disaster. They never firmed up and became "cake" like, nor did they have a molten center. They were just sort of mushy throughout. What did I do wrong? I followed the recipe word for word. So disappointing :-(

    Hi Hawley. I never encountered this problem. I over baked once, and it became a regular cake. I under baked once, and it was too much lava. I have always had lava inside, and cake outside when baked correctly. I'm sorry to hear about the disaster.

    Thanks Gwen. I'm so puzzled! I should say that I cut the recipe in half since it was a Vday dessert for me and hubby. Do you think that's what affected it?

    Hi Hawley. I cut the recipe in half before and did not encounter a problem. I use ramekins that are about 2 inches tall and 4.5 inches in diameter. This will ensure the middle is still lava-like while the outside cooks to a cake. If you are using a short ramekin/pan, this may be the problem.

    Hmmm... Are you supposed to put baking soda in this recipe? I'm just wondering how they'd get "puffy" without it... Well, I'm making them right now so I'll let you know how they turn out.

    Hi Gwen. I definitely will try this one. One question though, do you need mixer to beat the eggs or you just need a balloon whisk?
